Crispy Salted Egg Chicken

Title: Egg-Salted Chicken

Ingredients:

  • 250 grams chicken meat, diced
  • 4 salted duck egg yolks
  • 250-350 ml milk
  • 1 egg
  • Salt, to taste
  • Pepper, to taste
  • 2-3 cloves garlic, minced
  • 350 grams cornstarch
  • Cooking oil
  • Curry leaves (salam koja)
  • 2-3 red curly chilies

Instructions:

  1. Crush salted duck egg yolks until smooth, set aside.
  2. Cut chicken meat into large dice, set aside.
  3. Beat the chicken egg, season with salt and pepper to taste, set aside. Repeat the same with the cornstarch and chicken.
  4. Coat the seasoned chicken evenly with seasoned cornstarch, then dip into the seasoned beaten egg. Dip again into the seasoned cornstarch until coated evenly. Fry until golden brown, remove and drain.
  5. Finely chop or crush garlic, sauté until fragrant. Add the crushed salted egg yolks, sauté until foamy. Add curry leaves and sliced red curly chilies, then gradually pour in milk until well combined. Turn off the heat once it starts to bubble.
  6. Set aside most of the salted egg sauce. Combine the remaining sauce with the fried chicken corn, toss until evenly coated.
  7. Serve hot with rice, drizzle with additional salted egg sauce as desired. Enjoy your meal!
