Ayam Saus Hintalu Jaruk Recipe

Ingredients:

  • 1/2 chicken, cut into medium-sized pieces
  • 2 eggs of Hintalu Jaruk (salted duck eggs)
  • 1 red chili pepper
  • 1 green chili pepper
  • 300g all-purpose flour
  • 1 packet ground black pepper
  • 2 cloves garlic
  • 1 lime
  • Cooking oil for frying
  • Sugar, salt, and seasoning to taste

Instructions:

  1. Prepare the Chicken:

    • Cut the chicken into medium-sized pieces and wash thoroughly. Marinate with lime juice, salt, and ground black pepper.
  2. Prepare the Coating:

    • Prepare two separate batters:
      • Batter A: Mix all-purpose flour with salt, ground black pepper, seasoning, and ice water until smooth.
      • Batter B: Mix all-purpose flour with salt, ground black pepper, and seasoning.
  3. Coat and Fry the Chicken:

    • Dip each piece of chicken first into Batter A, then coat it evenly with Batter B.
    • Heat cooking oil in a pan and fry the chicken until golden brown. Remove and drain on paper towels.
  4. Prepare the Sauce:

    • Finely chop garlic, slice the red and green chili peppers. Mash the yolks of the salted duck eggs into a paste using cold water.
  5. Cooking the Sauce:

    • Sauté garlic and chili peppers until fragrant. Add the fried chicken and salted duck egg yolk paste.
  6. Season and Simmer:

    • Season with sugar, salt, ground black pepper, and seasoning to taste. Stir well until the sauce thickens.
  7. Serve:

    • Remove from heat and serve hot with steamed white rice.
