Crispy Sardines with Spicy Onion Sauce

Ingredients:

  • 1 can of sardines (large or small)
  • A few red shallots (adjust according to the size of the sardines)
  • A few red bird’s eye chilies (for those who like it spicy)
  • 1 large egg (beaten)
  • Bread crumbs (as needed)
  • 1 stalk of green onion (chopped for garnish)

Steps:

  1. Prepare the Sardines: Drain the sardines from their sauce. Set aside.

  2. Slice the Vegetables: While waiting, slice the red shallots and bird’s eye chilies. Adjust the quantity based on your preference for spice and flavor.

  3. Coat the Sardines: Take one piece of sardine and dip it into the beaten egg, ensuring it’s well-coated. Then, roll the sardine in bread crumbs. For a thicker coating, repeat this process once more.

  4. Fry the Sardines: Heat oil in a pan. Once hot, carefully add the breaded sardines. Fry until they turn golden brown and crispy. Remove and drain excess oil on paper towels.

  5. Prepare the Spicy Onion Sauce: In the same pan, add a tablespoon of the leftover frying oil. Quickly sautรฉ the sliced shallots and bird’s eye chilies until fragrant.

  6. Add the Sauce: Pour the sardine sauce into the pan with the sautรฉed shallots and chilies. Allow it to bubble and simmer briefly, then remove from heat.

  7. Garnish and Serve: When serving, drizzle the sardine sauce over the fried sardines and garnish with chopped green onions.

  8. Note: The sliced shallots are intended to help reduce the strong smell of the sardine sauce. If you prefer, you can skip this step.
