Sesame Shrimp Toast

Shrimp (peeled and deveined) 100g
Fresh spring onion 1
Cornstarch (cornflour) 3 tablespoons
Bread (white) 4 slices
Sesame seeds to taste
Egg white 1
Soy sauce 1 teaspoon
Peanut oil (for frying) to taste

Instructions:

  1. Prepare the Shrimp Mixture:
    Begin by thawing the shrimp, then place them in a blender. Add the fresh spring onion (chopped into small pieces), soy sauce, and cornstarch. Blend the ingredients until you achieve a smooth, homogenous mixture.

  2. Whisk the Egg White:
    In a separate bowl, whisk the egg white until stiff peaks form. Once whipped, gently fold the egg white into the shrimp mixture in the blender. This will give the shrimp paste a light, airy texture.

  3. Prepare the Bread:
    Take your slices of white bread and cut off the crusts. Spread the shrimp paste generously on one side of each bread slice.

  4. Coat the Bread with Sesame Seeds:
    On a shallow plate, spread a layer of sesame seeds. Place the bread slices, paste side down, into the sesame seeds. Gently press down so that the seeds stick to the paste.

  5. Cut and Fry:
    Using a sharp knife, cut each slice of bread diagonally into 4 triangles. Heat the peanut oil in a wok or deep frying pan over medium-high heat. Once the oil is hot, carefully add the bread triangles, sesame side down, and fry for about 2 minutes, or until golden brown and crispy.

  6. Drain Excess Oil:
    Remove the crispy shrimp toasts from the oil and place them on a paper towel to drain any excess oil.

  7. Serve Hot:
