Gujarati Style Sev Tamatar Ki Sabzi Recipe

Instructions:

  1. Heat the oil: Begin by heating 2 teaspoons of oil in a pan over medium heat. Once the oil is hot, add mustard seeds (rai) and cumin seeds (jeera). Let them sizzle for about 10 seconds until they start to pop.

  2. Add curry leaves and spices: To the pan, add the finely chopped curry leaves, asafoetida (hing), turmeric powder, and red chili powder. Stir well to combine.

  3. Cook the ginger and tomatoes: Add the grated ginger and chopped tomatoes into the pan. Season with salt, and mix everything thoroughly. Let the mixture cook for 2 minutes, stirring occasionally.

  4. Add jaggery and water: After 2 minutes, pour in 1/4 cup of water and add jaggery (gur). Stir to combine, then cover the pan with a lid. Let it cook for another 3 to 4 minutes, allowing the tomatoes to soften and the flavors to meld together.

  5. Add sev: Just before serving, sprinkle sev over the cooked tomato mixture. Mix lightly to incorporate the sev, adding a nice crunch to the dish.

  6. Serve: Serve the Gujarati Style Sev Tamatar Ki Sabzi hot, ideally with a side of Gujarati Kadhi and Bhakri (flatbread) for a traditional meal.
