Ingredients:
- 1 cup water
- 1/3 cup sugar
- 1/3 cup ghee
- 1 1/2 cups all-purpose flour
- Ghee for deep frying
Instructions:
-
Prepare the Dough:
- In a saucepan, warm the water, sugar, and ghee over medium heat until the sugar dissolves completely.
- Transfer the mixture to a mixing bowl and let it cool slightly.
- Add all-purpose flour (maida) to the bowl and knead into a soft, pliable dough. Ensure the ingredients are well combined.
-
Shape the Shankarpala:
- Divide the dough into 4 equal parts.
- Roll out each portion into thin chapatis, about 1/3 inch thick, using a rolling pin.
- Using a sharp knife or a cookie cutter, cut the rolled dough into small diamond shapes. Alternatively, you can cut them into your desired shape.
-
Rest and Dry:
- Gently lift the diamond-shaped Shankarpala with a spatula and place them on a clean, dry cloth.
- Allow the Shankarpala to air dry for about 1 hour. This step helps in achieving a crisp texture when frying.
-
Fry the Shankarpala:
- In a deep frying pan or kadhai, heat ghee over low-medium heat.
- Once the ghee is hot, carefully add the diamond-shaped Shankarpala in batches, ensuring not to overcrowd the pan.
- Fry the Shankarpala in hot ghee until they turn light golden brown and crisp on both sides. Keep an eye on them to prevent burning.
- Once fried, use a slotted spoon to remove the Shankarpala from the ghee and place them on a plate lined with paper towels to drain any excess oil.
-
Cool and Store:
- Allow the fried Shankarpala to cool completely at room temperature.
- Once cooled, transfer them to clean, dry containers or airtight jars for storage.
- Enjoy the crispy and flavorful Shankarpala as a snack or serve them during festive occasions to spread joy and happiness.
