Crispy Shrimp and Tofu Nuggets (Nugget UHu) Recipe

Ingredients:

  • 10 large shrimp (approximately 200g), peeled and deveined
  • 2-3 blocks of tofu
  • 5 tablespoons all-purpose flour
  • 4 tablespoons tapioca flour
  • 3 cloves garlic, minced
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 shallots, finely chopped
  • 2 eggs (1 for the batter and 1 for frying)
  • 2 carrots, diced
  • 2 tablespoons chopped celery
  • 2 tablespoons chopped green onions
  • 1 cup breadcrumbs
  • Cooking oil, for frying

Instructions:

  1. Prepare the Mixture:

    • In a food processor or blender, combine the shrimp, tofu, and one egg. Blend until the mixture is smooth and well combined.
  2. Mix the Ingredients:

    • Transfer the blended mixture to a large bowl. Stir in the diced carrots, chopped celery, and green onions until evenly distributed.
  3. Add the Flours:

    • Gradually incorporate the all-purpose flour and tapioca flour into the mixture. Mix thoroughly until the batter is smooth and consistent.
  4. Prepare the Steaming Tray:

    • Grease a clean baking tray with oil or margarine. Pour the batter into the tray, spreading it out evenly.
  5. Steam the Batter:

    • Place the tray into a steamer and steam for 30 minutes. Once done, remove the tray and let it cool to room temperature. After cooling, cut the mixture into nugget-sized pieces.
  6. Bread the Nuggets:

    • Pour breadcrumbs into a shallow dish. Beat the remaining egg in another bowl.
    • Dip each nugget piece first into the beaten egg, then coat it thoroughly with breadcrumbs. For a crispier coating, repeat the dipping process (egg, then breadcrumbs) and gently press the breadcrumbs onto the nuggets to ensure they stick well.
  7. Fry the Nuggets:

    • Heat oil in a frying pan over medium heat. Once the oil is hot, carefully place the breaded nuggets into the pan.
    • Fry the nuggets until they are golden brown and crispy, turning occasionally to ensure even cooking. Remove the nuggets from the pan and drain on paper towels.
  8. Serve:

    • Serve the crispy shrimp and tofu nuggets warm, with your favorite dipping sauce or as a delicious snack.
