Crispy Fried Snakehead Fish

Ingredients:

  • Snakehead fish (quantity as per your preference)
  • Crispy seasoning flour (brand of your choice)
  • Coriander seeds
  • Turmeric
  • Ginger
  • 4 kaffir lime leaves
  • Iced water
  • Cooking oil

Steps:

  1. Clean the Fish: Begin by thoroughly cleaning the snakehead fish to remove all slime and ensure it is spotless.
  2. Fillet the Fish: Cut the snakehead fish into thin fillets, approximately 3 cm in length, either in strips or squares as you prefer.
  3. Prepare the Marinade: Blend together turmeric, kaffir lime leaves, ginger, and coriander seeds until smooth. This mixture will serve as your seasoning base.
  4. Marinate the Fish: Coat the fish fillets with freshly squeezed lime juice and the blended seasoning. Mix well to ensure even coverage, then store in the refrigerator (not the freezer) for 30 minutes. This step helps to eliminate any fishy odor.
  5. Prepare the Batter: Create a wet batter by mixing crispy seasoning flour with iced water until it reaches a slightly thick consistency.
  6. Coat the Fish: Dip each marinated fish fillet into the wet batter, then roll it in the dry crispy seasoning flour. Make sure to press the flour onto the fish fillets to achieve an even coating.
  7. Heat the Oil: Heat a generous amount of cooking oil in a pan. The oil should be deep enough for the fish to be fully submerged, ensuring even cooking.
  8. Fry the Fish: Once the oil is hot, fry the coated fish fillets until they turn a golden brown color. This should take a few minutes per side, depending on the thickness of the fillets.
  9. Serve: Remove the fish from the oil and let it drain on paper towels to remove excess oil. Serve the crispy fried snakehead fish warm, accompanied by mayonnaise or your favorite dipping sauce.
