Crispy Snapper with Mango Sambal

Ingredients:

  • 1/2 kg snapper fish
  • Coriander, to taste
  • 2 cloves garlic
  • Tamarind paste, to taste
  • Salt

For the Mango Sambal:

  • 1 green mango
  • Roasted shrimp paste
  • 20 bird’s eye chilies (adjust to taste)
  • Salt, to taste

Instructions:

  1. Grind all ingredients except those for the sambal in a mortar and pestle. After grinding, marinate the fish evenly.
  2. Fry the fish until cooked. Once done, grind the sambal ingredients and finely chop the green mango (crush in a mortar and pestle so the mango juice can come out).
  3. Ready to serve with hot rice.
