Instructions:

To prepare the Sole Meunière, start by carefully cleaning, descaling, and washing the sole fillets. Once cleaned, gently pat them dry with paper towels to remove any excess moisture. This will help them brown evenly during cooking.

Next, clarify the butter. Clarifying butter ensures that it won’t burn during cooking, giving it a higher smoke point. To do this, melt the butter over low heat, allowing the milk solids to separate. Remove the foam from the top and discard any solids. The clear, golden butter left behind is what you will use for cooking.

Soak the sole fillets in milk for a few minutes. This step helps tenderize the fish and prepares it for the delicate searing process. After soaking, dust the fillets lightly with flour on both sides. Shake off any excess flour to prevent clumping during cooking.

In a large pan, heat the clarified butter over medium heat. Once hot, add the sole fillets, cooking them for 3-4 minutes on each side until they are golden brown and cooked through.
