- 2 rabbits
- 2 cups buttermilk
- 1 cup flour
- 1 cup yellow cornmeal
- 1 teaspoon salt
- 1/4 cup milk
- 1 teaspoon pepper

Prepare the Rabbit:
- Start by washing the rabbit thoroughly and disjointing it into manageable pieces.

Prepare the Batter:
- In a bowl, combine yolks and buttermilk.
- Gradually add 3/4 cup of flour, yellow cornmeal, and salt to the mixture.
- Beat until the batter becomes smooth and well-combined.

Heat the Lard:
- Heat the lard in a frying pan until it reaches a temperature of 360 degrees Fahrenheit.

Fry the Rabbit:
- Dip each piece of rabbit into the prepared batter, ensuring they are evenly coated.
- Fry the rabbit pieces in the hot lard for approximately 7 minutes on each side, or until they turn golden brown and crispy.

Cook the Rabbit:
- Reduce the heat to 275 degrees Fahrenheit and continue cooking the rabbit, turning frequently, until it becomes tender. This should take about 30 more minutes.

Drain and Prepare the Gravy:
- Once the rabbit is cooked, remove it from the frying pan and drain it on brown paper to remove excess oil.
- Pour off all but 2 teaspoons of lard from the pan.
- Over medium heat, slowly stir the remaining 1/4 cup of flour into the lard, making sure to scrape up any pieces of crust from the bottom of the pan.

- Once the flour is incorporated, gradually stir in the milk.
- Bring the mixture to a boil and cook, stirring constantly, until the gravy becomes smooth and thickened. This usually takes about 3 minutes.
- If the gravy seems too thick, you can add a little more milk to achieve the desired consistency.
