  • 2 rabbits
  • 2 cups buttermilk
  • 1 cup flour
  • 1 cup yellow cornmeal
  • 1 teaspoon salt
  • 1/4 cup milk
  • 1 teaspoon pepper
  • Salt to taste
  • Lard

Instructions:

  1. Prepare the Rabbit:

    • Start by washing the rabbit thoroughly and disjointing it into manageable pieces.
  2. Prepare the Batter:

    • In a bowl, combine yolks and buttermilk.
    • Gradually add 3/4 cup of flour, yellow cornmeal, and salt to the mixture.
    • Beat until the batter becomes smooth and well-combined.
  3. Heat the Lard:

    • Heat the lard in a frying pan until it reaches a temperature of 360 degrees Fahrenheit.
  4. Fry the Rabbit:

    • Dip each piece of rabbit into the prepared batter, ensuring they are evenly coated.
    • Fry the rabbit pieces in the hot lard for approximately 7 minutes on each side, or until they turn golden brown and crispy.
  5. Cook the Rabbit:

    • Reduce the heat to 275 degrees Fahrenheit and continue cooking the rabbit, turning frequently, until it becomes tender. This should take about 30 more minutes.
  6. Drain and Prepare the Gravy:

    • Once the rabbit is cooked, remove it from the frying pan and drain it on brown paper to remove excess oil.
    • Pour off all but 2 teaspoons of lard from the pan.
    • Over medium heat, slowly stir the remaining 1/4 cup of flour into the lard, making sure to scrape up any pieces of crust from the bottom of the pan.
  7. Prepare the Gravy:

    • Once the flour is incorporated, gradually stir in the milk.
    • Bring the mixture to a boil and cook, stirring constantly, until the gravy becomes smooth and thickened. This usually takes about 3 minutes.
    • If the gravy seems too thick, you can add a little more milk to achieve the desired consistency.
  8. Season and Serve:

    • Once the gravy is ready, add pepper and salt to taste.
    • Serve the fried rabbit hot, accompanied by the delicious homemade gravy.
