Savory Spiced Beef Corned Potato Stir-Fry

Ingredients:

  • 3 medium-sized potatoes
  • 1 can of corned beef
  • 3 shallots
  • 2 cloves of garlic
  • 10 red curly chilies
  • Sugar, to taste
  • Salt, to taste
  • Mushroom seasoning (non-MSG), to taste
  • Sweet soy sauce, to taste

Instructions:

  1. Prepare the Potatoes:
    Begin by peeling and dicing the potatoes into small cubes. Heat oil in a pan over medium heat, and fry the diced potatoes until they are golden brown and crispy. Set aside on paper towels to drain excess oil.

  2. Make the Spice Paste:
    While the potatoes are frying, peel and roughly chop the shallots and garlic. Remove the stems from the red chilies. Blend or grind the shallots, garlic, and chilies together until a smooth paste forms.

  3. Cook the Spice Paste:
    Heat a generous amount of oil in a non-stick frying pan or wok over medium heat. Add the spice paste and sauté until it becomes fragrant and the raw smell disappears.

  4. Add the Corned Beef:
    Open the can of corned beef and add it to the pan with the spice paste. Gently mix the corned beef with the spice paste, using a spatula to break up any large chunks. Stir-fry until the corned beef is well-coated with the spices and heated through.

  5. Combine Ingredients:
    Add the fried potatoes to the pan with the corned beef mixture. Stir gently to combine, making sure the potatoes are coated with the flavorful spices.

  6. Season and Adjust:
    Season the dish with sweet soy sauce, sugar, salt, and mushroom seasoning to taste. Continue to cook, stirring occasionally, until all the ingredients are well-mixed and the flavors have melded together.

  7. Taste and Serve:
    Taste the dish and adjust the seasoning as needed. Serve hot, garnished with fresh herbs if desired, for a delicious and satisfying meal.
