Fried Gembung Fish with Spices

Ingredients

  • 2 gembung fish (mackerel)
  • 2 tablespoons rice flour
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground pepper
  • Salt to taste
  • Mushroom broth seasoning (optional)

For the Spice Paste

  • 3 cloves garlic
  • 1/2 inch piece of ginger
  • 1/2 inch piece of turmeric

Instructions

  1. Prepare the Fish: Start by cleaning the gembung fish thoroughly, removing the scales and innards. Rinse under cold water and pat dry with a paper towel to ensure a good sear when frying.

  2. Marinate the Fish: In a mixing bowl, combine the rice flour, ground coriander, ground pepper, salt, and mushroom broth seasoning. Rub this mixture generously over the fish, ensuring an even coating. Cover the fish in the bowl with a lid or plastic wrap and allow it to marinate for 15 to 30 minutes. This resting period helps the flavors penetrate the fish, resulting in a more delicious dish.

  3. Prepare the Spice Paste: While the fish is marinating, make the spice paste. In a mortar and pestle or food processor, blend the garlic, ginger, and turmeric until you achieve a smooth paste. This aromatic blend will elevate the flavor of your fried fish.

  4. Fry the Fish: Heat a pan over low heat and add enough oil to cover the bottom. Once the oil is warm, gently place the marinated fish into the pan. Fry the fish slowly over low heat to ensure even cooking and to achieve a crispy exterior without burning. Cook until the fish is golden brown and cooked through, about 5-7 minutes on each side.

  5. Serve: Once cooked, remove the fish from the pan and place it on a plate lined with paper towels to absorb any excess oil. Serve the fried gembung fish hot, garnished with your favorite sides or a fresh salad for a delightful meal.

Enjoy this flavorful dish that beautifully showcases the essence of traditional cooking!
