Crispy Ayam Geprek Recipe

Ingredients:

  • 250 grams chicken fillet, cut into pieces
  • Salt and sugar to taste
  • 50-100 grams all-purpose flour
  • Assorted fresh vegetables for serving (basil, cabbage, cucumber)
  • Sufficient amount of hot oil
  • ❤ Spicy chili sambal
  • Red bird’s eye chilies and garlic to taste

Instructions:

  1. Prepare the Chicken:

    • Season the chicken pieces with salt and sugar. Coat them evenly with all-purpose flour.
  2. Frying the Chicken:

    • Heat oil in a frying pan over medium heat. Fry the chicken until golden brown and crispy. Remove from oil and set aside.
  3. Prepare the Spicy Sambal:

    • In a mortar and pestle, grind together red bird’s eye chilies and garlic until smooth. Alternatively, use a food processor.
  4. Combine Sambal and Oil:

    • In the same pan used to fry the chicken, heat up the leftover oil. Add the ground chili-garlic paste (sambal) to the hot oil. Stir fry until fragrant and well combined.
  5. Geprek the Chicken:

    • Place the fried chicken on a chopping board or plate. Use a pestle or the back of a spoon to smash the chicken pieces gently.
  6. Serve:

    • Transfer the smashed chicken onto a serving plate. Pour the prepared spicy sambal over the chicken. Serve hot with assorted fresh vegetables on the side.
