Simple Ayam Geprek Recipe

Ingredients:

  • 1/4 chicken breast
  • 1 packet of all-purpose flour (Sajiku brand)
  • 1 egg
  • 20 red chilies
  • 2 cloves of garlic
  • Cooking oil (for frying)

Instructions:

  1. Prepare the Chicken: Begin by thoroughly cleaning the chicken breast. Rinse it under cold water, then boil until fully cooked. Once done, set aside to cool.

  2. Prepare the Coating: Create two types of batter—one dry and one wet. To make the dry batter, simply use the all-purpose flour packet. For the wet batter, beat the egg and mix it with some of the dry flour, adjusting the amount of flour as needed to achieve a thick, yet pourable consistency. Set both batters aside.

  3. Coat the Chicken: After the chicken has cooled, dip it first into the dry batter to coat it lightly. Then, dip it into the wet batter, ensuring it’s fully covered. Return it to the dry batter and coat it again. Press gently to make sure the coating sticks well.

  4. Fry the Chicken: Heat oil in a frying pan over medium heat. Once hot, carefully add the coated chicken pieces and fry until golden brown and crispy. Remove and drain on paper towels.

  5. Prepare the Sambal: While the chicken is frying, boil the red chilies and garlic until softened. Once boiled, transfer them to a mortar and pestle or food processor and grind into a smooth paste.

  6. Assemble the Dish: Place the fried chicken on a serving dish. Spread the chili-garlic paste over the chicken, pressing slightly to help it adhere.
