Simple Ayam Geprek Recipe

Ingredients:

  • 250 grams chicken fillet
  • 1 packet all-purpose seasoning flour (I use Sasa Hot & Spicy)
  • 1 egg
  • 10 bird’s eye chilies (adjust to taste)
  • 1 clove garlic
  • A pinch of salt
  • Oil for frying

Instructions:

  1. Prepare the Chicken:

    • Begin by lightly beating the egg in a bowl, adding just a splash of water to loosen it up.
    • Take the chicken fillets, which should be cleaned and patted dry. Coat each piece thoroughly with the all-purpose seasoning flour.
    • Dip the floured chicken into the beaten egg, allowing any excess to drip off, then coat it again with the seasoning flour. Repeat this process 2-3 times to ensure a crispy coating.
  2. Fry the Chicken:

    • Heat oil in a pan over medium-high heat. Once the oil is hot, carefully place the coated chicken fillets in the pan.
    • Fry the chicken until it turns golden brown and crispy, about 5-7 minutes, depending on the thickness of the fillets. Remove the chicken from the oil and drain on paper towels.
  3. Prepare the Sambal:

    • In a mortar and pestle, crush the bird’s eye chilies, garlic, and a pinch of salt until you achieve a rough paste.
    • Heat a small amount of oil in a pan until it’s hot but not smoking, then pour it over the chili-garlic paste. This step infuses the sambal with a deeper flavor.
  4. Assemble and Serve:

    • Place the fried chicken fillets onto a serving plate. Generously spoon the sambal over the top of the chicken.
    • For a cooling effect to balance the heat, serve the dish with cucumber slices on the side.
