Crispy Spicy Ayam Geprek with Garlic Sambal

Ayam Geprek

Ingredients:

For the Chicken:

  • 250 grams chicken wings
  • 2 cloves garlic
  • 1 packet all-purpose seasoning mix
  • 2 tablespoons rice flour
  • Salt to taste
  • Water as needed

For the Sambal:

  • 10 small red chilies
  • 1 clove garlic
  • A pinch of salt
  • Cooking oil for frying

Instructions:

  1. Prepare the Chicken:

    • Start by thoroughly washing the chicken wings. In a mortar and pestle, crush the garlic with a pinch of salt until it forms a paste.
    • Rub the garlic paste all over the chicken wings, ensuring they are well coated. Allow the chicken to marinate in the refrigerator for about 3 to 4 hours, so the flavors can infuse.
  2. Prepare the Coating:

    • In a bowl, combine the all-purpose seasoning mix with the rice flour. This mixture will form the dry coating for the chicken.
    • Take approximately 1 tablespoon of this dry mixture and mix it with a little water to create a wet batter.
  3. Coat the Chicken:

    • Dip each piece of marinated chicken into the wet batter, then roll it in the dry coating mixture, pressing gently to adhere. Repeat the process by dipping the chicken back into the wet batter and then again into the dry mixture, ensuring an even coating.
  4. Fry the Chicken:

    • Heat a generous amount of oil in a pan over low heat. Fry the coated chicken wings in the hot oil, cooking them slowly until they turn golden brown and are cooked through.
  5. Prepare the Sambal:

    • While the chicken is frying, prepare the sambal. Blend the small red chilies, garlic, and a pinch of salt until smooth.
    • Heat a little oil in a separate pan and pour in the blended sambal mixture. Cook the sambal over medium heat until fragrant and slightly thickened.
  6. Combine and Serve:

    • Once the chicken is crispy and golden, remove it from the oil and drain on paper towels.
    • Place the fried chicken wings into the hot sambal, gently pressing down to “geprek” (crush) the chicken into the sambal, allowing it to absorb the flavors.
  7. Serve:

    • Serve the Ayam Geprek hot with steamed rice. Enjoy the delightful combination of crispy chicken and spicy sambal!

Tip: Adjust the level of spiciness in the sambal to your taste by varying the number of chilies used. For an extra kick, consider adding a splash of lime juice to the sambal before serving.
