Ayam Geprek

Ingredients:

  • 1/4 kg chicken breast
  • 1 packet fried chicken flour (any brand will work)
  • 6 shallots
  • 1 clove garlic
  • 3 red chilies
  • 6 bird’s eye chilies
  • Cooking oil for frying
  • Salt and sugar to taste

Instructions:

  1. Begin by cleaning the chicken breast and cutting it into pieces according to your preference. Prepare the chicken by following the instructions provided on the packet of fried chicken flour. This will ensure a crispy and flavorful coating for the chicken.

  2. While the chicken is frying, prepare the sambal. Peel and finely chop the shallots and garlic. Slice the red chilies and bird’s eye chilies. Combine these ingredients in a mortar and pestle or food processor to create a coarse paste. Add salt and sugar to taste, adjusting the seasoning to your preference.

  3. Once the chicken is golden and crispy, remove it from the oil and set it aside to drain on paper towels.

  4. Heat a small amount of the leftover frying oil in a pan until it is very hot. Pour this hot oil over the sambal paste to infuse the flavors and create a fragrant, spicy sauce.
