Crispy Ayam Geprek a’la Dina Recipe
Ingredients:
- 1 boneless chicken breast
- Chicken crispy seasoning flour
- 1 egg
- 1/2 liter cooking oil
Spicy Sambal:
- 10 red bird’s eye chilies
- 2 shallots
- 1 garlic clove
- 1 tomato
- 1 tsp granulated sugar
- 1/2 tsp salt
- 2 tbsp leftover cooking oil from frying the chicken
Steps:

Slice the chicken breast thinly. Set aside.

Beat the egg in a bowl. Coat the chicken slices evenly with the beaten egg, then lift and coat with the chicken crispy seasoning flour. Repeat the process: coat in egg, flour, and set aside.

Heat cooking oil in a pan. Fry the chicken slices until golden brown, crispy, and fully cooked. Remove and set aside on paper towels to drain excess oil.

Using a mortar and pestle, grind together red bird’s eye chilies, shallots, garlic, tomato, sugar, and salt until smooth.

In a separate pan, heat the leftover cooking oil until hot. Pour in the ground spice mixture (sambal) and stir fry until fragrant and well combined.

Place the fried chicken slices on top of the sambal in the mortar. Crush or ‘geprek’ the chicken by pressing down with the pestle to blend the flavors. Coat the chicken with additional sambal.

Serve hot and crispy Ayam Geprek a’la Dina immediately.
