Instructions
-
Preparation of Chicken and Ingredients
Begin by cleaning the chicken and cutting it into bite-sized pieces. Slice the onion and set it aside. -
Roasting Spices and Making the Masala Paste
In a kadai or deep frying pan, heat about 2 teaspoons of oil. Once the oil is warm, add cumin seeds and allow them to sizzle for a few seconds.
Immediately add the chopped ginger, garlic, green chillies, cinnamon stick, and cloves. Roast these ingredients on a medium flame until the chillies darken slightly and release their aroma. -
Grinding the Spices
Once the spices are roasted, transfer them along with the chopped coriander leaves to a mixer. Grind this mixture into a fine, thick paste. Add a little water if needed to achieve the right consistency. Set this masala paste aside for later use. -
Marinating the Chicken
In a large mixing bowl, combine the chicken pieces with salt, yogurt (curd), and the ground masala paste. Add turmeric powder, corn flour, all-purpose flour (maida), and egg white to the mixture. Stir well to ensure the chicken is evenly coated with the marinade.
Cover the bowl and refrigerate the marinated chicken for about 4 hours. This will allow the flavors to meld and the chicken to tenderize. -
Frying the Chicken
After the marinating period, heat enough oil for deep frying in a large frying pan. Once the oil is hot, reduce the heat to low. Carefully drop the chicken pieces into the oil, one by one. Fry the chicken on low heat to ensure they become crispy and golden brown.
Remove the fried chicken pieces from the oil and place them on a kitchen towel to absorb excess oil. Repeat the process for all the chicken pieces. -
Frying the Onions and Curry Leaves
In the same hot oil, increase the heat slightly. Fry the sliced onions and curry leaves until they are crispy and golden brown. This step will add an extra crunch and flavor to your dish. -
Serving
Once all the chicken is fried and the onions and curry leaves are crisp, it’s time to serve. Arrange the crispy fried chicken on a platter and top it with the fried onions and curry leaves.
