Ingredients:

  • 10 pieces chicken (marinated with garlic, ginger, vinegar, and pepper)
  • 2 small packets of Sajiku flour (or any all-purpose flour)

For the Fire Wings Sauce:

  • 2 cloves garlic (crushed or minced)
  • 3 tablespoons tomato ketchup
  • 5 tablespoons sambal sauce (e.g., ABC brand or your preferred chili sauce)
  • 1 teaspoon oyster sauce
  • 1 teaspoon black pepper
  • 2 tablespoons Bon Cabe Level 30 (adjust to taste; optional: add sliced bird’s eye chilies for extra heat)
  • Sweet soy sauce (optional, to taste)

Instructions:

  1. Prepare the Chicken:

    • Dredge the marinated chicken pieces in Sajiku flour, making sure each piece is well-coated. Gently shake off any excess flour.
    • Heat oil in a frying pan over medium heat. Fry the coated chicken pieces until golden brown and crispy. Remove from the pan and set aside.
  2. Prepare the Sauce:

    • In a separate pan, melt some Blue Band margarine (or butter) over medium heat.
    • Sauté the minced garlic until fragrant.
    • Add the tomato ketchup, sambal sauce, oyster sauce, and black pepper. Stir well to combine.
    • If desired, add a splash of water to the sauce to achieve your preferred consistency, and cook until the sauce thickens.
  3. Combine and Serve:

    • Add the fried chicken pieces to the pan with the sauce. Toss gently to coat the chicken evenly with the sauce.
    • Cook for an additional minute or two, allowing the flavors to meld and the sauce to cling to the chicken.
    • Remove from heat and serve immediately. Enjoy your Spicy Fire Chicken hot and crispy!
