Spicy Tempeh Jeletot Recipe (Contemporary Style)

Ingredients

Tempeh (cut into squares) 1 block
All-purpose flour 6 tbsp
Rice flour 2 tbsp

Instructions

  1. Prepare the Tempeh:

    • Slice the tempeh into square pieces, then cut a slit in the middle to create a pocket for the filling. Be careful not to slice through completely!
  2. Prepare the Batter:

    • In a mortar or blender, grind together the garlic, coriander, and salt to make the spice mix.
    • In a bowl, combine the ground spice mix with 6 tablespoons of all-purpose flour and 2 tablespoons of rice flour. Add water gradually while stirring to create a batter. The batter should be thick enough to coat the tempeh without being too runny. Optionally, you can add sliced green onions for extra flavor.
  3. Prepare the Filling:

    • In a mortar or blender, grind the bird’s eye chilies, curly red chilies, shallots, garlic, salt, and bouillon powder to create a spicy filling.
    • Heat a tablespoon of oil and mix it into the ground filling to bring out the flavors.
  4. Stuff the Tempeh:

    • Take the spicy filling and stuff it into the slit you created in each piece of tempeh, making sure the filling is evenly distributed but not spilling out.
  5. Fry the Tempeh:

    • Heat oil in a pan over medium heat.
    • Dip each stuffed tempeh into the batter, ensuring the filling is securely enclosed, and coat it evenly.
    • Fry the tempeh until it turns golden brown and crispy, about 4-5 minutes per side. Make sure the filling doesn’t leak out during frying.
  6. Serve:

    • Once the tempeh is crispy and golden, remove it from the oil and drain it on paper towels.
    • Serve hot with your favorite dipping sauce, or enjoy it as is for a spicy, crispy snack!
