Spicy Stuffed Tofu (Tahu Pedas/Tahu Granat)

Ingredients:

Raw tofu (approx. $0.40 per piece) 5 pieces
Grated carrots ½ kg
Sausages, chopped small 6 pieces
Seasonings:

Red bird’s eye chilies 300 g
Shallots 15 pieces
Garlic cloves 8 pieces
Ground pepper 1 teaspoon
Sugar and salt To taste
Coating:

All-purpose flour As needed

Instructions:

  1. Preparing the Tofu:

    • Cut each of the 5 pieces of tofu into 8 smaller pieces, giving you a total of 40.
    • Soak the tofu pieces in salted water for a few minutes to season them. Drain and pat dry.
    • Deep fry the tofu until golden and crispy. Set aside to cool.
  2. Making the Filling:

    • Using a mortar and pestle or a blender, grind together the red chilies, shallots, and garlic until you have a smooth paste.
    • Heat some oil in a pan over medium heat. Sauté the chili paste until fragrant and fully cooked.
    • Add in the grated carrots and chopped sausages. Stir-fry for a few minutes, adding a splash of water to prevent sticking.
    • Season with ground pepper, sugar, and salt to taste. Cook until the carrots are tender and the sausages are fully cooked.
    • Let the filling cool down to room temperature.
  3. Stuffing the Tofu:

    • Make a slit in each fried tofu piece, creating a pocket for the filling.
    • Stuff each tofu piece with the cooled vegetable and sausage filling.
  4. Coating the Stuffed Tofu:

    • In a small bowl, mix the all-purpose flour with enough water to create a thick, smooth batter.
    • Dip each stuffed tofu piece into the batter, ensuring it’s evenly coated.
    • Roll the coated tofu in bread crumbs until fully covered. Arrange the tofu on a tray and refrigerate for 30 minutes to help the coating set.
  5. Frying the Stuffed Tofu:

    • Heat oil in a deep frying pan over medium heat.
    • Fry the coated stuffed tofu until golden brown and crispy, about 3-5 minutes per side.
    • Remove from the oil and drain on paper towels to remove any excess oil.
  6. Serving:

    • Serve the Spicy Stuffed Tofu hot and enjoy it with your favorite dipping sauce or as a standalone snack.
