Tahu Cabe Garam

This Indonesian-inspired dish, Tahu Cabe Garam, features crispy fried tofu cubes coated with a spicy seasoning blend and paired with a savory mixture of fried chilies and aromatic herbs. It’s a perfect snack or side dish, offering a delightful contrast of textures and flavors.

Ingredients

  • 2 pieces of firm tofu, cut into small cubes
  • 2 packets of spicy all-purpose seasoning mix (such as mamaSuka brand)
  • 1/4 cup ice-cold water
  • 2 tablespoons all-purpose flour
  • Vegetable oil, for deep frying
  • 3 cloves garlic, finely chopped
  • 2 shallots, finely chopped
  • 2 tablespoons sliced green onions
  • 2 teaspoons salt
  • 1 teaspoon chicken bouillon powder
  • 1 teaspoon margarine, for sautéing
  • 10 red bird’s eye chilies, thinly sliced
  • 5 green bird’s eye chilies, thinly sliced

Instructions

  1. Prepare the Tofu Coating:

    • In a bowl, mix 1 packet of spicy seasoning mix with 2 tablespoons of all-purpose flour. Gradually add the ice-cold water, stirring until you have a smooth batter.
  2. Heat the Oil:

    • Heat vegetable oil in a pan or deep fryer until it reaches a high temperature. The oil should be hot enough to fully submerge the tofu cubes (deep fry).
  3. Coat the Tofu:

    • Dip the tofu cubes into the prepared batter, ensuring they are fully coated. Then, roll them in the remaining spicy seasoning mix to coat thoroughly.
  4. Fry the Tofu:

    • Carefully place the coated tofu cubes into the hot oil. Fry over medium heat until golden brown and crispy. Remove the tofu with a slotted spoon and drain on paper towels. Ensure the oil remains hot to achieve a crispy texture.
  5. Prepare the Chili and Onion Mixture:

    • In a separate pan, heat 1 teaspoon of margarine over medium heat. Add the sliced red and green chilies, chopped garlic, and chopped shallots. Sauté until the mixture becomes fragrant and golden brown.
  6. Season the Mixture:

    • Add the sliced green onions, salt, and chicken bouillon powder to the pan. Stir to combine all the ingredients. Turn off the heat.
  7. Combine and Serve:

    • Add the fried tofu to the chili and onion mixture, tossing gently to coat. Taste and adjust seasoning with additional salt if needed. Serve the dish warm.
