  1. Prepare the vegetables: Begin by heating oil in a pan. Add the finely chopped onion and sauté it until it turns translucent. Once the onion softens, add the grated carrot and finely chopped cabbage to the pan. Sauté these vegetables for 2-3 minutes until they become tender and slightly cooked.

  2. Spices and seasoning: Once the vegetables are cooked, add the red chilli powder, turmeric powder, coriander powder, and garam masala powder to the pan. Mix the spices thoroughly with the vegetables. Season the mixture with salt to taste. Cover the pan and let it cook for another 2 minutes, allowing the spices to blend in.

  3. Mash the potatoes: Turn off the heat. Take the sautéed vegetable mixture and add it to the boiled potatoes. Mash everything together using a potato masher, ensuring that all the ingredients are combined into a smooth, cohesive mixture.
