Spicy Mixed Vegetable Rice Cutlet Recipe

Ingredients:
- 1 cup cooked rice
- 1/2 cup mashed potato (cooked and peeled)
- 1 finely chopped onion
- 1 chopped green chili
- 1 grated carrot
- 2 tbsp chopped fresh coriander
- A pinch of turmeric powder
- 1/4 tsp red chili powder
- 1/2 tsp cumin powder
- 1/2 tsp coriander powder
- 1/4 tsp garam masala powder
- 1/2 cup bread crumbs
- Salt to taste
- 1 tbsp all-purpose flour (maida)
- Water, as needed
- Oil for frying

Instructions:
- In a mixing bowl, combine the cooked rice, mashed potatoes, chopped onion, green chili, grated carrot, and chopped coriander. Mix everything well.
- Add the turmeric powder, red chili powder, cumin powder, coriander powder, garam masala, and salt to the mixture. Stir to combine thoroughly.
- Once well-mixed, shape the mixture into round or oval-shaped patties (tikkis).
- In a separate bowl, mix the all-purpose flour and water to make a smooth batter.
- Spread bread crumbs on a plate.
- Dip each patty into the flour batter, then coat it with bread crumbs, pressing gently to ensure they stick.
- Heat some oil in a pan or tawa. Once the oil is hot, place the patties in the pan and cook until they are golden brown and crispy on both sides.
- Continue making the patties in this way until all are cooked.
Serve the Spicy Mixed Vegetable Rice Cutlets hot with coriander-mint chutney and tamarind chutney as a delicious evening snack. Enjoy!
