These crispy and savory spinach croquettes are paired with a luscious gorgonzola sauce, making them an irresistible appetizer that will have your guests coming back for more. Perfect for parties, gatherings, or a special occasion, this dish combines the earthy flavor of spinach with the creamy richness of cheese. Follow these easy steps for a delightful treat that is both comforting and indulgent!

Ingredients:

Ingredient Quantity
Spinach 600g
Whole milk 500ml
Butter 70g
All-purpose flour (00) 70g
Ground nutmeg to taste
Breadcrumbs to taste
Eggs 3
Salt to taste
Ground black pepper to taste
Peanut oil (for frying) as needed
Gorgonzola cheese 200g
Heavy cream (liquid) 100ml

Instructions:

  1. Prepare the Spinach: Start by blanching the spinach in boiling water for about 3-4 minutes. Once cooked, remove the spinach and let it cool. Squeeze out excess water using a kitchen towel, then finely chop the spinach with a knife.

  2. Make the Spinach Mixture: In a large pan, melt the butter over medium heat. Add the chopped spinach, and cook briefly to combine. Add the flour and stir, making sure to coat the spinach evenly. Season with nutmeg, salt, and black pepper, and continue cooking until the mixture thickens and begins to pull away from the sides of the pan, forming a dough-like consistency.

  3. Chill the Mixture: Transfer the spinach mixture into a baking dish or tray, smoothing it to a uniform thickness of about 2 cm. Place it in the refrigerator to chill for at least one night. This step helps the mixture set and makes it easier to shape into croquettes.

  4. Shape the Croquettes: After chilling, remove the mixture from the fridge. Cut it into small pieces, approximately 3 cm in size and 2 cm thick. Place these pieces onto a tray lined with parchment paper.

  5. Prepare the Gorgonzola Sauce: In a small pan, heat the heavy cream over medium heat. Once warm, crumble the gorgonzola cheese into the cream and stir until the cheese is melted and the sauce becomes smooth. Set aside to cool.

  6. Coat the Croquettes: In a shallow bowl, beat the eggs. In another bowl, place the breadcrumbs. Take each spinach piece, dip it into the egg mixture, then coat it in breadcrumbs, followed by another dip in the egg wash. Ensure each croquette is evenly coated.

  7. Fry the Croquettes: Heat peanut oil in a deep pan or fryer. Fry the croquettes in batches, turning them until golden brown and crispy, about 2-3 minutes. Once fried, remove them from the oil and drain on paper towels to remove excess oil.

  8. Serve: Arrange the crispy spinach croquettes on a serving plate and drizzle with the creamy gorgonzola sauce. Serve immediately while they are warm and crispy!

These Spinach Croquettes with Gorgonzola Sauce make for a decadent appetizer that’s full of flavor and texture. The combination of the tender spinach filling and the creamy, tangy gorgonzola sauce creates a perfect bite-sized treat that is sure to impress at any gathering. Enjoy this recipe as a crowd-pleasing starter or as part of a delicious Italian-inspired meal.
