Instructions

  1. Preheat the oven to 375°F (190°C). Make sure your oven is fully heated before placing the pie in to ensure even baking.

  2. Prepare the pie dish by lightly coating a 9-inch pie dish with cooking spray to prevent sticking and make cleanup easier.

  3. Make the filling: In a large bowl, combine the ricotta cheese, parmesan cheese, thawed and drained chopped spinach, eggs, finely chopped scallion, crumbled feta cheese, lemon juice, dried dill, salt, black pepper, and ground nutmeg. Stir well to combine all the ingredients into a smooth mixture.

  4. Assemble the phyllo crust: Place the first sheet of phyllo dough in the prepared pie dish. Brush it lightly with olive oil using a pastry brush, then sprinkle a tablespoon of breadcrumbs on top.

  5. Layer the dough: Repeat the process of adding one sheet of phyllo dough, brushing with oil, and sprinkling with breadcrumbs until you’ve used up all the phyllo sheets. Each layer should be slightly overlapping the last one to create a flaky and sturdy crust.
