Instructions

Step 1: Preparing the Dough

  1. In a large mixing bowl, combine the whole wheat flour, 1 tablespoon of sunflower oil, cumin seeds, ajwain, salt, finely chopped spring onion greens, and coriander leaves.
  2. Mix these ingredients together thoroughly. Begin adding water little by little, kneading as you go, until the mixture forms a stiff, pliable dough for puris.
  3. Once the dough has come together, add a few drops of oil and smooth it out by kneading for a minute. Cover the dough and let it rest for about 5 minutes.

Step 2: Shaping the Puris

  1. After resting, divide the dough into lemon-sized portions.
  2. Dust each portion with a little flour, and roll each ball into a round puri of about 3 inches in diameter. Aim for medium thickness to ensure even frying.

Step 3: Frying the Puris

  1. Heat oil in a deep kadai (or deep frying pan) over medium-high heat until it’s hot but not smoking.
  2. Carefully slide one rolled puri into the hot oil. Using a slotted spoon, gently press down on the puri as it cooks to encourage slight puffing.
  3. Due to the presence of spring onions, cumin, and ajwain in the dough, the puris will puff just slightly—similar to a phulka but with more texture.
  4. Fry until the puri is golden and crisp, flipping it once to cook both sides evenly.
  5. Remove the puri from the oil and place it on a plate lined with paper towels to drain any excess oil. Repeat with the remaining dough portions.
