Instructions

  1. Prepare the Ingredients:
    Begin by gathering and prepping all the ingredients for the fritters. Slice the onion thinly, chop the coriander leaves and green chillies, and grate the ginger. Set these aside.

  2. Make the Batter:
    In a large mixing bowl, combine the gram flour (besan), rice flour, sprouted moong beans, onions, coriander leaves, green chillies, grated ginger, coriander powder, garam masala powder, lemon juice, salt, and red chilli powder. Mix the ingredients well. Gradually add water to the mixture, stirring gently to form a thick batter. Make sure the batter is thick enough to hold its shape when dropped into the oil. Avoid adding too much water at once to prevent the batter from becoming too runny.

  3. Heat the Oil:
    Heat oil in a deep pan or kadai. To test if the oil is hot enough, drop a small amount of batter into the oil. If it sizzles immediately and rises to the surface, the oil is ready for frying.

  4. Fry the Fritters:
    Using a spoon or your hands, drop spoonfuls of the batter into the hot oil. Fry the fritters in batches to avoid overcrowding. Fry until they turn golden brown and crisp on all sides. This should take around 3-5 minutes per batch. Keep turning the fritters to ensure they are evenly cooked.
