Ingredients

Bean sprouts 1 bowl
Carrot 1, coarsely grated
Shallots 3 cloves, thinly sliced
Garlic 1 clove, thinly sliced
Green onion 1 stalk, chopped
Red chili (optional) 2 pieces
Vegetable oil 2 tablespoons
Oyster sauce 1 tablespoon
Salt, pepper, and sugar To taste

Instructions

  1. Prepare Ingredients: Gather all your ingredients. Note: I like to trim the tails off the bean sprouts, but you can skip this step if preferred.

  2. Sauté Aromatics: Heat the vegetable oil in a pan over medium heat. Sauté the shallots, garlic, green onion, and optional chili until fragrant.

  3. Add Carrot: Stir in the grated carrot and mix well. If needed, add a small splash of water to help it cook.

  4. Incorporate Eggs: Add the beaten eggs to the pan, stirring gently to combine with the vegetables.

  5. Add Bean Sprouts: Finally, toss in the bean sprouts and mix thoroughly. Season with salt, pepper, and sugar to taste, adjusting as necessary.

  6. Finish Cooking: Turn off the heat, making sure the bean sprouts remain crisp and not overcooked.
