Stuff the Tempe: Fill each piece with sambal; for this recipe, sambal matah is recommended (you can find the sambal matah recipe in Mama OS’s collection).

Coat with Flour: Take the instant tempe flour (brands like Kriuk, Sajiku, or crispy chicken flour work well), and dip the stuffed tempe into the flour mixture, ensuring it’s fully coated.

Fry the Tempe: Heat the cooking oil in a pan. Once hot, gently place the coated tempe in the oil and fry until golden brown. Remove and let drain on paper towels.
