Tahu Brontak (Stuffed Fried Tofu)

Ingredients

Fried tofu (tahu goreng) 10 pieces
Bean sprouts (tauge) 1 ounce
Oyster mushrooms (jamur tiram) 2 pieces
Cabbage (kol) 3 leaves
Green onion (daun bawang) 1 stalk
Garlic (bawang putih) 3 cloves
Salt To taste
Ground pepper (lada bubuk) To taste
Cooking oil (minyak goreng) As needed
Batter Mixture:
All-purpose flour (tepung terigu) 2 tablespoons
Cornstarch (tepung maizena) 1 tablespoon
Mixed seasoning flour (tepung bumbu serbaguna) 1 tablespoon (Sasa brand preferred)

Instructions

  1. Prepare the Tofu: Carefully slice each fried tofu in half, removing the insides to create a pocket for stuffing.
  2. Cook the Filling: Thinly slice the cabbage and oyster mushrooms. In a pan, sauté the garlic until fragrant, then add the sliced cabbage, oyster mushrooms, bean sprouts, salt, and ground pepper. Stir-fry until the vegetables are tender and well combined. Finally, mix in the chopped green onion and set aside.
  3. Stuff the Tofu: Spoon the vegetable mixture into each tofu pocket, ensuring they are filled generously.
  4. Make the Batter: In a bowl, combine all-purpose flour, cornstarch, and mixed seasoning flour. Gradually add water until a smooth batter forms.
  5. Fry the Tofu: Dip each stuffed tofu piece into the batter, allowing excess to drip off. Heat oil in a frying pan over medium heat. Fry the tofu until golden and crispy on all sides. Remove and drain on paper towels.
