Tahu Jungkir Balik (Tahu Walik): A Crispy Indonesian Delight

Tahu Jungkir Balik, also known as Tahu Walik, is a delicious Indonesian snack featuring crispy fried tofu filled with a savory chicken mixture. This recipe offers a delightful blend of textures and flavors, perfect for those who enjoy a crispy, savory treat. Follow these steps to create this mouthwatering dish at home!

Ingredients

  • 1/4 kg chicken (boneless, finely chopped or ground)
  • 3 cloves garlic
  • Nutmeg, to taste
  • Black pepper, to taste
  • Salt, to taste
  • A pinch of Royco (or any seasoning powder of your choice)
  • Mineral water, as needed
  • All-purpose flour
  • Tapioca flour
  • Fried tofu, cut into cubes

Instructions

  1. Prepare the Tofu:

    • Start by slicing the fried tofu into cubes. Set aside.
  2. Prepare the Chicken Mixture:

    • In a blender, combine the chopped chicken, garlic, and nutmeg. Add enough mineral water to help blend the mixture smoothly.
    • Blend until the mixture is finely ground and smooth.
  3. Mix the Batter:

    • Transfer the blended chicken mixture to a large bowl.
    • Add all-purpose flour and tapioca flour in a 2:1 ratio to the chicken mixture. Stir until the batter reaches a thick but smooth consistency. The batter should not be too runny. Adjust the flour quantities as needed.
  4. Season the Batter:

    • Add salt, black pepper, and a pinch of Royco to the batter. Mix well and taste to ensure the seasoning is to your liking.
  5. Stuff the Tofu:

    • To stuff the tofu, first, invert each tofu cube so that the white part is facing outward and the browned side is facing inward.
    • Carefully spoon the chicken batter into the hollowed-out tofu cubes. Ensure you fill each cube generously.
    • Fold the tofu back to enclose the filling. The batter acts as a glue to hold the tofu together.
  6. Shape and Fill:

    • If there is excess batter, you can shape it into small balls (pentol) and boil them for additional servings or store them in the freezer for future use.
  7. Fry the Tofu:

    • Heat oil in a pan over low heat. Fry the stuffed tofu cubes until they are golden brown and crispy all over. Cook slowly to ensure the filling is fully cooked without burning the exterior.
  8. Serve:

    • Enjoy the Tahu Jungkir Balik with your favorite spicy sauce for an extra kick. This snack is perfect for sharing or enjoying as a delightful treat.
  9. Tips for Perfect Tofu:

    • Ensure the oil is not too hot to avoid burning the tofu. Cooking on low heat allows the tofu to cook through evenly.
    • If you have leftover batter, store it in the freezer or form into small balls and cook them as a separate dish.

Enjoy your homemade Tahu Jungkir Balik with a side of spicy sauce for a truly satisfying snack experience. Happy cooking!
