Crispy Stuffed Tofu Bites with Savory Veggies

Tahu Sumpel (Stuffed Tofu with Vegetables)

Ingredients:

  • 20 pieces of pre-fried brown tofu (tahu coklat)
  • 3 packs of bean sprouts (toge)
  • 2 carrots
  • Green onions, sliced (as needed)
  • For the Stir-Fry Filling:
    • 5 red bird’s eye chilies (cabai rawit merah)
    • 3 cloves garlic (bawang putih)
    • 2 shallots (bawang merah)
    • Ground pepper (lada bubuk)
    • Salt (garam)
    • Flavor enhancer (penyedap rasa)
    • 1/5 kg all-purpose flour (terigu)
    • Oil for frying (minyak untuk menggoreng)
  • For the Coating Batter:
    • 3 cloves garlic (bawang putih)
    • 1 tablespoon coriander (ketumbar)
    • Turmeric (just enough for color; kunyit)

Instructions:

  1. Prepare the Vegetables:

    • Peel the carrots and cut them into matchstick-sized pieces. Combine with the bean sprouts and wash thoroughly.
  2. Prepare the Tofu:

    • Wash the pre-fried tofu and gently squeeze to remove any excess oil. Carefully hollow out the tofu, creating space for the filling.
  3. Prepare the Stir-Fry Filling:

    • Slice the red chilies, garlic, and shallots. Heat a small amount of oil in a pan (just enough for sautéing) over medium heat. Add the sliced chilies, garlic, and shallots to the hot oil. Sauté until fragrant.
    • Add the bean sprouts and carrot to the pan, along with salt, flavor enhancer, and ground pepper. Stir well and cook until the vegetables are tender. Taste and adjust seasoning as needed. Set aside to cool.
  4. Prepare the Coating Batter:

    • In a mixing bowl, combine the ground garlic, coriander, and a small amount of turmeric with the all-purpose flour. Gradually add water to form a batter. The consistency should be thick enough to coat the tofu without being too runny.
  5. Stuff the Tofu:

    • Fill each piece of tofu with the vegetable mixture until full.
  6. Fry the Tofu:

    • Heat a generous amount of oil in a frying pan or deep fryer. The oil should be enough to fully submerge the tofu.
    • Dip each stuffed tofu piece into the batter, coating it thoroughly. Carefully place the coated tofu into the hot oil. Fry until golden brown and crispy. Remove and drain on paper towels.
  7. Serve:
