Crispy Stuffed Tofu with Bean Sprouts and Carrots

Tahu Isi Recipe

Ingredients:

  • 10 pieces of firm tofu (cut into cubes)
  • Salt (to taste)

For the Filling:

  • 1 package bean sprouts
  • 1 medium carrot (julienned)
  • 1 stalk green onion (sliced)
  • 3 cloves shallots (finely chopped)
  • Salt (to taste)
  • 1/2 teaspoon salt
  • Black pepper (to taste)
  • 1/4 teaspoon granulated sugar

For the Coating:

  • 1 cm turmeric (peeled)
  • 1 clove garlic
  • 2 cloves shallots
  • 5-7 tablespoons all-purpose flour
  • Water (as needed)
  • Salt, black pepper, and bouillon powder (to taste)

Instructions:

  1. Prepare the Tofu: Begin by washing the tofu and seasoning it with salt. Steam the tofu pieces for about 10-15 minutes. Once done, set aside to cool.

  2. Prepare the Filling: Peel and wash the carrot, then cut it into matchstick-sized pieces. Remove the roots from the bean sprouts and slice the green onion.

  3. Cook the Filling: Heat a pan with a little oil and sauté the finely chopped shallots until fragrant. Add the julienned carrots and season with salt and pepper. Cook until the carrots start to soften. Add the sliced green onion and cook for another minute. Finally, stir in the bean sprouts and cook until slightly wilted. Remove from heat and let the mixture cool.

  4. Stuff the Tofu: Once the tofu has cooled, cut a slit in the center of each piece to create a pocket. Gently stuff each tofu pocket with the prepared filling. Set the stuffed tofu aside.

  5. Prepare the Coating: In a blender, combine the turmeric, garlic, and shallots and blend until smooth. Mix this paste with the flour, adding water gradually to form a smooth batter. Season the batter with salt, black pepper, and bouillon powder.

  6. Fry the Tofu: Heat oil in a frying pan over medium heat. Dip each stuffed tofu piece into the batter, ensuring it is fully coated. Fry the tofu pieces until golden brown and crispy. Remove from the oil and drain on paper towels.

  7. Serve: Serve the crispy tahu isi hot, and enjoy this delicious and flavorful treat!
