Instructions:

  1. Prepare the Vegetables:

    • Wash the cabbage, carrots, green onions, and celery thoroughly.
    • Shred the cabbage and julienne the carrots. Chop the green onions and celery into small pieces.
  2. Make the Filling:

    • In a mortar or blender, finely crush the garlic, salt, and pepper until smooth.
    • Heat a small amount of cooking oil in a pan over medium heat.
    • Add half of the garlic mixture and sauté until fragrant, about 1-2 minutes.
    • Add the shredded vegetables (cabbage, carrots, green onions, celery) and stir-fry until they are just wilted but still retain a bit of crunch.
    • Sprinkle sugar over the vegetables, stirring to combine. Cook for another 2-3 minutes.
    • Remove the vegetable filling from the heat and let it cool slightly.
  3. Prepare the Batter:

    • In a mixing bowl, combine all-purpose flour and rice flour.
    • Add the remaining garlic mixture into the flour.
    • Gradually pour water into the flour mixture while stirring, until you achieve a thick but smooth batter. It should coat the back of a spoon without being too runny.
  4. Stuff the Tofu:

    • Slice the tofu triangles in half, creating a pocket without cutting all the way through.
    • Carefully stuff each tofu piece with a generous amount of the vegetable filling.
  5. Fry the Tofu:

    • Heat oil in a deep fryer or large skillet over medium-high heat.
    • Dip each stuffed tofu into the batter, making sure it’s evenly coated.
    • Gently place the tofu into the hot oil and fry until golden brown and crispy on all sides, about 3-5 minutes.
    • Remove the tofu from the oil and drain on a paper towel to remove excess oil.
  6. Serve:

    • Serve the crispy, golden Tahu Isi while still warm with a side of spicy bird’s eye chilies or your favorite dipping sauce. Enjoy!

This crunchy and savory snack is sure to be a hit with friends and family. The balance of the crispy tofu and the soft, flavorful vegetable filling creates a delightful bite that’s both satisfying and light. You can also customize the filling by adding other vegetables or even proteins like ground chicken or shrimp.
