Delicious Stuffed Tofu (Tahu Isi Enak) Recipe
Ingredients:
For the Stuffing:
- 5 pieces of tofu, sliced in half
- 1 jicama (bengkuang), peeled and finely chopped
- 1 carrot, peeled and finely chopped
- 1/2 onion, finely sliced
- 4 cloves of garlic, minced
- 150 grams of shrimp, finely chopped
- Seasoning mix (such as Sajiku), to taste
- Salt, to taste
- Sugar, to taste
- Pepper, to taste
For the Dipping Sauce:
- 2 cloves of garlic
- 1 red bird’s eye chili (cabe rawit merah)
- 1 teaspoon ABC chili sauce
- 2 tablespoons lime or lemon juice
- 1/2 teaspoon sugar
- A splash of water
Instructions:

Prepare the Stuffing:
- Heat a pan over medium heat and sauté the finely sliced onion and minced garlic until fragrant.
- Add the chopped shrimp and cook until they turn pink.
- Incorporate the finely chopped carrot and jicama into the pan.
- Season the mixture with the seasoning mix, salt, sugar, and pepper to taste.
- Add a small amount of water to the pan and cook until the vegetables are tender and the flavors meld together. Set aside to cool.

Prepare the Tofu:
- Slice the tofu pieces in half to create a pocket. Heat oil in a frying pan and fry the tofu halves until they are halfway cooked. Remove from the oil and set aside.

Stuff the Tofu:
- Once the tofu is cool enough to handle, carefully open each piece and stuff it with the prepared vegetable and shrimp mixture.

Make the Batter:
- Prepare a wet batter using the Sajiku flour mix and a small amount of water. The batter should be thick enough to coat but not too thick.

Fry the Stuffed Tofu:
- Dip each stuffed tofu piece into the batter, ensuring it is well coated.
- Heat oil in a pan and fry the battered tofu until golden brown and crispy. Remove from the oil and drain on paper towels.

Prepare the Dipping Sauce:
- In a small blender or mortar, combine garlic, red chili, chili sauce, lime or lemon juice, sugar, and a splash of water. Blend until smooth.

- Serve the crispy stuffed tofu hot with the spicy dipping sauce on the side.
