Baso Tahu: A Flavorful Indonesian Delight

Ingredients:

Ingredient Quantity
Tofu (tahu) 1 pack (5 pieces), halved
Oncom (fermented soybean cake) 1 block (about 1000g)
Bird’s eye chili To taste
Red chili To taste
Red onions 5 cloves
Garlic 1 clove
Tomato 1/2
Onion (yellow) 1/2
Green onions 2 leaves
Prepared batter flour 1 pack
Rice flour 3 tablespoons
Salt To taste
Sugar To taste
Water As needed

Instructions:

  1. Prepare the Oncom: Crumble the oncom into small pieces. Boil water and blanch the tofu for a few minutes to keep it fresh and firm, ensuring it doesn’t sour if stored overnight.

  2. Make the Spice Paste: Blend the bird’s eye chili, red chili, red onions, garlic, and yellow onion into a smooth paste.

  3. Sauté the Aromatics: Heat oil in a pan and sauté the yellow onion until softened. Add the blended spice paste, stirring and gradually adding water until the raw smell disappears. Once fragrant, add the chopped tomato and mix until combined. Season with salt and sugar.

  4. Incorporate the Oncom: Stir in the crumbled oncom and cook until well combined, adjusting the seasoning to taste.

  5. Prepare the Coating: In a bowl, combine the prepared batter flour and rice flour. Gradually add water to create a smooth batter, similar in consistency to banana fritter batter. Season with a pinch of salt and sugar.

  6. Fill the Tofu: Carefully stuff each halved tofu piece with the oncom mixture.

  7. Fry the Tofu: Dip each stuffed tofu piece into the batter, coating well. Heat oil in a deep pan and fry the tofu until golden brown and crispy.
