All-purpose flour 250 grams (1/4 kg)
Carrot 1 medium
Bean sprouts 200 grams
Green onions (daun bawang) 2 stalks
Bird’s eye chilies (cabai rawit) To taste
Garlic cloves 3 cloves
Salt To taste
Sugar To taste
Ground pepper (lada bubuk) To taste
Coriander powder To taste

For Spicy Peanut Sauce:

Ingredients Quantity
Petis (fermented shrimp paste) 2 tablespoons
Water 100 ml
Bird’s eye chilies (cabai rawit) To taste
Salt To taste
Sugar To taste
Garlic cloves 1 clove
Roasted peanuts 3 tablespoons

Instructions

  1. Prepare the Tofu: Begin by cutting each piece of ready-to-use tofu into two triangular halves and gently scoop out the inside to create a hollow space. This will be the vessel for your vegetable filling.

  2. Prepare the Vegetables: Thinly slice the bird’s eye chilies, green onions, and carrot. Rinse them thoroughly to ensure they are clean and fresh.

  3. Sauté the Filling: In a skillet, heat a splash of oil over medium heat. Add the bean sprouts, bird’s eye chilies, green onions, carrot, and the previously scooped out tofu filling. Season with salt, sugar, and ground pepper to taste. Sauté until the vegetables are tender and well-combined, adjusting seasoning as needed.

  4. Stuff the Tofu: Once the vegetable mixture is ready, fill the hollowed tofu pieces generously with the sautéed vegetable filling.

  5. Prepare the Batter: In a bowl, mix the all-purpose flour with enough water to create a smooth batter. Season the batter with salt and coriander powder. For a quicker option, you can use ready-made crispy batter mix.

  6. Fry the Tofu: Carefully dip each stuffed tofu piece into the batter, ensuring that the filling stays intact. Heat oil in a frying pan over medium heat and fry the battered tofu until they are golden brown and crispy. Remove from oil and let them drain on paper towels.

  7. Make the Spicy Peanut Sauce: While the tofu is frying, prepare the spicy peanut sauce by combining the petis, roasted peanuts, and garlic in a mortar and pestle. Grind them together until smooth, then gradually mix in water to achieve your desired consistency. Season with bird’s eye chilies, salt, and sugar to taste.

  8. Serve: Once the tofu is golden and crispy, remove them from the pan, drain, and serve warm with the spicy peanut sauce drizzled on top or served on the side for dipping.

Enjoy Your Meal!

Relish the delightful crunch of the tofu combined with the spicy, nutty flavors of the peanut sauce. Tahu Brontak with Spicy Peanut Sauce is a delectable dish that will surely become a favorite in your culinary repertoire. Enjoy every bite, and happy cooking!
