Turmeric powder (Haldi) 1/4 teaspoon
Coriander powder (Dhania) 2 teaspoons
Cumin powder (Jeera) 1 teaspoon
Garam masala powder 1/2 teaspoon
Curd (Dahi/Yogurt) 2 tablespoons
Oil As required for deep frying
Salt To taste

Instructions:

  1. Prepare the Suran:
    Begin by peeling the elephant yam (suran). Cut it into 1-inch cubes and wash thoroughly. Drain the water and pat the yam pieces dry using absorbent paper to remove any excess moisture.

  2. Marinate the Suran:
    Transfer the yam cubes to a bowl and season with salt and 2 tablespoons of kebab masala. Toss everything together to coat the pieces evenly in the spices. Let the yam pieces sit for 10 minutes to absorb the flavors.

  3. Deep Fry the Suran:
    Heat oil in a heavy-bottomed pan or kadai on medium heat, ensuring there is enough oil to deep fry the yam cubes. Gently slide the suran pieces into the hot oil and fry them until they turn crisp and golden brown. This should take around 8-10 minutes. Stir occasionally to ensure even cooking. Once done, remove the suran kebabs from the oil and drain on absorbent paper to remove excess oil. Set aside.

  4. Prepare the Gravy:
    In a pressure cooker, heat 1 teaspoon of oil over medium heat. Add the finely chopped onions and sauté until they turn golden brown, which will take around 4-6 minutes.

  5. Add Ginger-Garlic Paste:
    Add the pounded ginger, garlic, and green chili paste to the onions. Mix well and cook for about 1-2 minutes until the raw smell of the ginger and garlic fades away.

  6. Spice it Up:
    Stir in the red chili powder and the homemade tomato puree. Cook the mixture until the oil begins to separate from the masala, which should take about 3-4 minutes.

  7. Add Dry Masalas:
    Once the oil separates, add the turmeric powder, coriander powder, cumin powder, and garam masala powder to the gravy. Stir everything together, and allow the masalas to cook for another 2 minutes to enhance their flavor.

  8. Combine the Kebab and Gravy:
    Now, add the deep-fried suran kebabs to the gravy, followed by the curd and salt. Mix gently, ensuring that the yam pieces are well coated with the spicy gravy. Add a little water to adjust the consistency of the gravy as desired.

  9. Pressure Cook:
    Close the pressure cooker lid and cook the mixture on medium heat for 2 whistles. Afterward, allow the pressure to release naturally.

  10. Final Touches:
    Open the pressure cooker, stir the contents, and garnish with fresh coriander leaves for a burst of freshness.
