Sweet and Sour Crispy Chicken (Ayam Tepung Asam Manis)

Ingredients:

  • 1/2 kg chicken (cut into pieces)
  • All-purpose flour
  • Salt
  • Sugar
  • 1/2 onion (finely chopped)
  • 4 bird’s eye chilies (sliced thinly)
  • 2 tablespoons oyster sauce
  • 100 grams chili sauce
  • 1 tablespoon cornstarch
  • Water (approx. 100 ml)

Instructions:

  1. Prepare the Chicken: Begin by seasoning the chicken pieces with salt and a touch of Royco seasoning (or your preferred chicken seasoning). Dredge the chicken in all-purpose flour to coat thoroughly. For a crispier texture, prepare two separate coatings: a wet batter and a dry flour coating. The wet batter should be seasoned with salt and a pinch of Royco. Ensure the chicken is well-coated in both the wet batter and the dry flour mixture.

  2. Fry the Chicken: Heat oil in a pan over low heat. Fry the chicken pieces gently to ensure even cooking and to prevent the flour coating from burning. Cook until the chicken is golden brown and crispy. Remove from the oil and set aside on paper towels to drain excess oil.

  3. Prepare the Sauce: In a separate pan, heat a small amount of oil and sauté the finely chopped onion until it becomes aromatic. Add the sliced bird’s eye chilies and continue to cook until they release their fragrance.

  4. Create the Sauce Mixture: Stir in the chili sauce and oyster sauce. In a small bowl, dissolve the cornstarch in approximately 100 ml of water to create a slurry. Pour the slurry into the sauce mixture, stirring continuously until the sauce thickens to your desired consistency.

  5. Season the Sauce: Adjust the flavor of the sauce by adding salt and sugar according to your taste preferences. Taste and tweak the seasoning if necessary.

  6. Combine and Serve: Once the sauce is well-seasoned and has reached the desired thickness, add the crispy fried chicken pieces into the sauce. Gently toss the chicken to ensure it is evenly coated with the sweet and sour sauce. Serve immediately while hot, garnished with additional sliced chilies or fresh herbs if desired.
