Sweet and Sour Chicken Fillet

Ingredients:

  • 2 boneless chicken breasts
  • 100g all-purpose flour
  • 50g cornstarch
  • 1 egg white
  • 5 tbsp tomato sauce
  • 1/2 tbsp oyster sauce
  • 1 onion, sliced
  • 2 cloves garlic, finely chopped
  • 1 tsp salt
  • 1 tsp granulated sugar
  • 1 tsp ground black pepper

Instructions:

  1. Prepare the Chicken:

    • Clean and cut the chicken breasts into small pieces according to your preference.
    • Season with salt, pepper, and egg white.
  2. Coating the Chicken:

    • In a bowl, mix together the all-purpose flour, cornstarch, a pinch of salt, and black pepper. You can also use instant chicken flour mix if preferred.
    • Coat the chicken pieces evenly with the flour mixture.
  3. Frying the Chicken:

    • Heat oil in a frying pan over medium-high heat.
    • Fry the chicken pieces in batches until they turn golden brown and crispy, about 5-6 minutes. Drain on paper towels to remove excess oil.
  4. Making the Sweet and Sour Sauce:

    • In a separate pan, heat 3 tablespoons of cooking oil.
    • Sauté the chopped garlic until fragrant, then add the sliced onion.
  5. Adding Flavors:

    • Stir in the tomato sauce, oyster sauce, and half a glass of water.
    • Season with salt, sugar, and ground black pepper. Mix well and adjust seasoning to taste.
  6. Thickening the Sauce:

    • Dissolve 1 teaspoon of cornstarch in a little water to make a slurry.
    • Gradually add the cornstarch slurry to the sauce mixture, stirring constantly until the sauce thickens to your desired consistency.
  7. Final Assembly:

    • Turn off the heat and add the fried chicken to the sweet and sour sauce.
    • Mix gently until the chicken is evenly coated with the sauce.
  8. Serving:

    • Transfer the sweet and sour chicken fillet to a serving dish.
    • Garnish with chopped spring onions or sesame seeds if desired.
    • Serve hot with steamed rice or noodles.
