Sweet and Sour Red Snapper Recipe

Ingredients:

  • 1 whole red snapper, filleted (save the head and bones)
  • 1 carrot, julienned
  • 1 cucumber, julienned
  • ½ pineapple, diced
  • 3 tablespoons of green peas
  • Seasoned flour
  • ½ onion, finely chopped
  • 5 garlic cloves, smashed and chopped
  • 1 cm ginger, finely chopped
  • Oyster sauce, to taste
  • 1 packet of Saori sweet and sour sauce
  • Tomato sauce
  • Cooking oil
  • Salt, to taste

Instructions:

  1. Prepare the Fish:

    • Rinse the red snapper fillets under cold water and season with lime juice and salt. Ensure that you also use the head and bones of the fish. Let it sit for 15 minutes to marinate, then drain.
  2. Fry the Fish:

    • Coat the fish fillets in seasoned flour. Heat cooking oil in a pan over medium heat and fry the fillets until golden brown and crispy. Place the fried fish on a serving plate.
  3. Prepare the Sauce:

    • In a separate pan, heat a small amount of oil and sauté the chopped onion, garlic, and ginger until fragrant and translucent.
    • Add a splash of water and the julienned carrots to the pan. Cook until the carrots are tender.
    • Incorporate the cucumber, pineapple, green peas, sweet and sour sauce, and oyster sauce. Stir well and cook for a few minutes until everything is heated through and the flavors meld. Adjust the seasoning with salt to taste.
  4. Assemble the Dish:

    • Pour the sweet and sour sauce mixture over the fried red snapper fillets arranged on the plate. Serve immediately and enjoy!
