Ingredients

Ingredient Quantity
Silver pomfret fish (medium size) 1 whole fish
Carrot (julienned) 1 piece
Onion (thinly sliced) 1/2 piece
Garlic (thinly sliced) 2 cloves
Shallots (thinly sliced) 2 cloves
Red chili peppers (diagonally sliced) 2 pieces
Green onion (for garnish) 1 stalk
Tomato (roughly chopped) 1/2 piece
Sweet and sour sauce (Saori brand) 1 tablespoon
Water 80 ml
Salt, pepper, and sugar to taste
Cooking oil for frying

Instructions

Prepare the Fish

  1. Clean the Fish: Begin by thoroughly cleaning the silver pomfret, ensuring that all the insides are removed. Rinse the fish under cold water and pat it dry with paper towels.

  2. Seasoning: Rub a little salt over the fish, allowing it to marinate briefly while you prepare the other ingredients.

  3. Frying: In a deep frying pan, heat enough cooking oil over medium-high heat until it’s hot. Carefully place the fish into the oil and fry until it is golden brown and crispy, which should take about 5-7 minutes on each side. Once done, remove the fish from the oil and let it drain on paper towels.

Make the Sweet and Sour Sauce

  1. Sautรฉ Aromatics: In a separate pan, heat a tablespoon of oil over medium heat. Add the sliced onions, garlic, and shallots, sautรฉing them until they become fragrant and golden brown.

  2. Add Vegetables: Stir in the julienned carrot, sliced red chili peppers, and chopped tomato. Sautรฉ the mixture for a couple of minutes until the vegetables are slightly tender.

  3. Create the Sauce: Pour in the sweet and sour sauce along with 80 ml of water. Stir to combine all the ingredients. Season with salt, pepper, and sugar according to your taste. Let the mixture cook until the sauce thickens and the flavors meld together, about 5-7 minutes.

Assemble the Dish

  1. Combine: Once the sauce has reached the desired consistency, carefully pour it over the fried silver pomfret.

  2. Garnish: Finally, garnish the dish with finely chopped green onions to add a fresh touch.
