Sweet and Sour Tilapia

Ingredients:

  • 1 fresh tilapia, cleaned and deboned
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 egg
  • 1 red bell pepper, sliced
  • 1 cucumber, sliced
  • 1 cup pineapple chunks
  • All-purpose flour
  • Salt, to taste
  • Chicken powder, for seasoning
  • Sesame oil
  • Angciu (sweet cooking wine)
  • Sugar, to taste
  • Cooking oil

Instructions:

  1. Prepare the Tilapia:

    • Clean the tilapia thoroughly, removing the bones, and cut into small pieces.
    • Coat the tilapia pieces with beaten egg and then dredge in flour until evenly coated.
    • Heat cooking oil in a pan over medium-high heat. Fry the tilapia pieces until golden brown and crispy. Remove and set aside.
  2. Prepare the Sweet and Sour Sauce:

    • In the same pan, stir-fry minced garlic and chopped onion until fragrant and translucent.
    • Add the sliced red bell pepper, cucumber, and pineapple chunks. Cook briefly until the vegetables are slightly tender.
  3. Cooking the Sauce:

    • Pour in the sweet and sour sauce mixture (made from sambal, tomatoes, and a bit of water) into the pan.
    • Stir well and let it simmer until the sauce thickens slightly and becomes glossy. Adjust the sweetness and seasoning with sugar, salt, and chicken powder according to your taste.
    • Add a dash of sesame oil and angciu (sweet cooking wine) for depth of flavor.
  4. Combine and Serve:

    • Pour the sweet and sour sauce over the fried tilapia pieces, ensuring they are well coated.
    • Garnish with sliced spring onions or cilantro for a fresh touch.
    • Serve hot with steamed rice or as desired.
