Sweet and Sour Tuna
Ingredients
- For the Tuna:
- 250 grams tuna fillet
- 75 grams crispy flour
- 5 tablespoons all-purpose flour
- 1 egg
- 1 onion
- 5 shallots
- 3 cloves garlic, minced
- 2 large red chilies
- 3 bird’s eye chilies
- 1 tomato
- Green onions, to taste
- Salt, to taste
- Sugar, to taste
- 2 teaspoons oyster sauce
- 5 tablespoons sweet soy sauce
- 2 tablespoons ketchup
- Flavor enhancer (optional)
- Juice of 1 lime
- Oil for frying

Prepare the Tuna:
- Rinse the tuna fillets thoroughly under cold water, then drain well. Cut the fillets into pieces according to your preference. Season with salt and lime juice, then let them marinate for about 5 minutes to absorb the flavors.

Coat the Tuna:
- In a mixing bowl, whisk the egg until well beaten. In another bowl, combine the crispy flour and all-purpose flour. Dip each piece of marinated tuna into the egg mixture, ensuring it is fully coated, then dredge it in the flour mixture.

- Heat a generous amount of oil in a frying pan over medium-high heat. Once the oil is hot, carefully place the coated tuna into the pan. Fry until golden brown and crispy on all sides. Once cooked, remove the tuna from the oil and place it on a paper towel to drain excess oil.

- In the same pan, sauté all the chopped aromatics: onion, shallots, garlic, and both types of chilies until fragrant. Add the diced tomato and continue to sauté until soft.
