Sweet and Spicy Crispy Chicken (Ayam Tepung Asam Manis)
Ingredients:
- 1/2 kg chicken (cut into bite-sized cubes)
- 1 packet of seasoned flour mix (I use Mamasuka brand)
- 2 large eggs
- 5 bird’s eye chilies (cabe setan), sliced
- 1 large onion
- 5 cloves garlic, minced
- 2 tablespoons chili sauce
- 1 tomato, chopped
- 1 teaspoon flavor enhancer (optional)
- Cooking oil
- 2 tablespoons palm sugar (gula merah)
Instructions:

Prepare the Chicken:
- Cut the chicken into bite-sized cubes according to your preference.

Coat the Chicken:
- In one bowl, beat the eggs. In another bowl, place the seasoned flour mix.
- Dip each piece of chicken into the beaten eggs, then coat thoroughly with the seasoned flour mix.
- Heat cooking oil in a pan over medium heat. Fry the coated chicken pieces until golden brown and crispy. Remove from the pan and drain on paper towels.

Prepare the Sauce:
- In a separate pan, heat a small amount of oil over medium heat.
- Add the minced garlic, sliced onions, and bird’s eye chilies. Sauté until fragrant and the onions become translucent.
- Add the chopped tomato, palm sugar, and a pinch of flavor enhancer if using. Stir until the tomato softens and the sugar dissolves.
- Pour in a small amount of water and stir in the chili sauce. Cook until the sauce thickens slightly. Adjust the seasoning to taste.

Combine and Serve:
- Gently toss the crispy chicken pieces into the sauce, ensuring they are well-coated.
- Serve hot, garnished with extra chopped chilies or fresh herbs if desired.
