Ingredients

Ingredient Quantity
Tempeh 1 board
Kaffir lime leaves (daun jeruk) 4 leaves
Galangal (lengkuas) 1 small piece
Lemongrass (serai) 1 stalk
Anchovies (ikan teri) 4 tablespoons (optional)
Peanuts (kacang tanah) 4 tablespoons (optional)
Sweet soy sauce (kecap) 2 tablespoons
Palm sugar (gula jawa) 2 tablespoons
Granulated sugar (gula pasir) 3 tablespoons
Salt (garam) 1 teaspoon
Chicken broth powder (kaldu bubuk) to taste
Spice Paste:
Shallots (bawang merah) 6 cloves
Garlic (bawang putih) 4 cloves
Red curly chilies (cabe merah keriting) 7 pieces
Bird’s eye chilies (cabe rawit setan) 3 pieces

Instructions

  1. Prepare the Tempeh: Slice the tempeh thinly into matchstick shapes. Heat oil in a pan and fry the tempeh until it is completely dry and crispy. Remove and set aside.

  2. Fry the Anchovies and Peanuts: In the same oil, fry the anchovies and peanuts until they are crispy. Drain and set aside.

  3. Make the Spice Paste: Using a food processor or mortar and pestle, blend the shallots, garlic, red curly chilies, and bird’s eye chilies with the kaffir lime leaves until smooth.

  4. Sautรฉ the Spices: Heat a small amount of oil in a pan over low to medium heat. Add the spice paste and sautรฉ until fragrant.

  5. Add Aromatics: Incorporate the galangal, lemongrass, and remaining kaffir lime leaves into the sautรฉed spice mixture. Cook until the spices are thoroughly fragrant.

  6. Add Sweeteners: Slice the palm sugar and add it to the pan, stirring well to combine with the spices. Be sure to maintain a low heat to prevent burning.

  7. Incorporate Liquid Ingredients: Add a splash of water to the pan and stir continuously. Then, add the sweet soy sauce, granulated sugar, salt, and chicken broth powder. Mix until everything is well combined.

  8. Thicken the Sauce: Continue to stir the mixture until it thickens to a caramel-like consistency. Taste and adjust the seasoning if necessary.

  9. Combine with Fried Ingredients: Quickly add the fried anchovies and peanuts to the thickened sauce, stirring rapidly. Immediately follow with the fried tempeh, mixing until all ingredients are well coated with the sauce.

  10. Serve and Store: Once everything is well combined, transfer the Kering Tempe Pedas Manis to a serving dish. This dish can be enjoyed warm or at room temperature and is perfect as a side dish. Store any leftovers in an airtight container to maintain crispness.
